Baked Rueben Sliders

Gameday. Weekday. Everyday is the perfect occassion for delicious, buttery Rueben sliders!


Whether you need to feed a hungry crowd or just want a quick delicious dinner for family, this fun twist on the classic Rueben will be sure to have you sliding into home base! Hint: the secret's in the butter sauce topping.


We all know it's hard to go wrong with the age old combo of baked bread and cheese...throw in a few extra spices and all the classic Rueben sandwich fixings, and you've got yourself a one-way ticket to foodie Heaven! Paired with a side of creamy macaroni salad and your favorite chips, these will add a fresh kick to your outdoor summer picnic. Or serve alongside a baked potato and BBQ beans and you've got yourself the perfect recipe to fight off those cold winter blues...this is truly an incredibly versatile main dish that you'll want to make again and again all year round!



Crowd pleasing, flavor-full goodness all wrapped up in one neat cheesy package! Be ready to wow with these unique sliders!

Now without further ado, let's get you on your way to creating your new favorite way to making an old favorite. Be warned, you'll never want traditional Ruebens again!

INGREDIENTS


Preheat oven to 350 Prep time: 15 min Cook time: 20 min

Sandwich

  • 1/2 lb corned beef

  • Thousand Island dressing

  • Sauerkraut

  • Swiss cheese

  • Slider buns, white

Topping

  • 3 tbsp Butter (melted)

  • 1 tbsp Thousand Island dressing (may also use honey or dijon mustard, or your favorite sweet dressing)

  • 1 tbsp dried chopped onion

  • 2 tsp garlic powder

Start by preheating your oven to 350 degrees.



Line your baking sheet with parchment paper to ensure the cheese does not stick to the pan, and for easy cleanup. I love these pre-cut baking sheets, they fit regular baking sheets perfectly so you can avoid wasting paper.


Now, put your 3 tbsp of butter in a microwave safe dish and melt in the microwave about 10-15 seconds. Stir in 1 tbsp of thousand island dressing (or dressing of your choice), 1 tbsp dried chopped onion and 2 tsp garlic powder. Set aside.


Cut your slider buns in half if they are not already pre-cut. Lay the bottom halves of the buns on the pan and set the tops aside (best to put them back in the bag to keep them fresh while you pile on the rest of the ingredients).


Spread approximately 1 tbsp of Thousand Island dressing onto each bun bottom, then top each one with a slice of Swiss cheese. Next you'll want to top that with sauerkraut. I find it's best to get a handful and squeeze the excess water out over the sink to keep the buns from getting soggy. Spread your "dry" sauerkraut over the cheese generously....seriously you can't have too much sauerkraut on a Rueben!


Now bring on the beef! I prefer to use deli cut corned beef as thinner cuts tend to get hard around the edges when baking. Two slices per bun should be enough, but feel free to add more if you're a big fan of super meaty sandwiches. Top once again with one slice of Swiss cheese per bun.


Put on the bun tops, and grab your butter sauce mixture! Using a brush or spoon, cover the tops of the buns in the butter mixture. This will add that delicious glaze to really spice up your bread.


Bake in your preheated oven for 20 minutes. Once finished, allow to cool for 3-5 minutes before separating...this will help the cheese stick to the sandwiches once you pull them apart. Trust me, you don't want to lose any of that gooey cheese!


Plate and serve with your favorite sides, dig in, and most importantly, don't forget to breathe!
