ITALIAN STUFFED SHELLS



If you're in the mood for lasagna, but not all the hassle of preparation, then you need to give these baked stuffed shells a try! They are so good and so easy to make, and best of all, cheap!


I came up with this recipe after my boyfriend had a tooth pulled and had to stay on soft foods for awhile. I thought, this is a perfect opportunity to make something new! I wanted a recipe that was simple and delicious, and that could satisfy my Italian food craving. Giant shells are so versatile, I really love how many different things you can do with them and have been wanting to do some experimenting for awhile.


So far these have been a smashing success with everyone that's tried them, and the general consensus has been that this recipe is most definitely blog-worthy. So, by popular demand I am sharing my stuffed shells with the world! Let's get started!



INGREDIENTS

Preheat oven: 350 Prep time: 15 min Cook time:25 min Serves: 4


  • 1 lb regular or Italian sausage

  • 1 24oz jar Prego Creamy Vodka sauce

  • 1 box jumbo pasta shells

  • 1 green pepper, diced

  • 1/2 cup yellow onion, chopped

  • 1/2 cup mozzarella cheese

  • 1/2 cup Italian blend or Parmesan cheese

  • 1/4 cup chopped green onion

Preheat oven to 350 degrees


  1. Start large pot of water boiling.While waiting on water to boil, chop up 1/2 cup onion and 1 green pepper.

  2. Once water is boiling, add in shells along with any oil you use for boiling (I use olive oil) and cook until tender.

  3. Combine sausage, green pepper and onion in a pan and fry until cooked through.

  4. Drain noodles and run under cold water to stop them from continuing to cook and to make them easier to handle, as they will be very hot.Lay noodles out on paper towels to dry.

  5. Once sausage is fully cooked, stir in all but 1 cup of your Vodka Sauce and simmer for a few minutes.

  6. In a baking pan, spread the remaining 1 cup of sauce around the bottom.Using a large table spoon or 1/4 cup measuring cup, scoop up meat mixture and pour into the shells one at a time.

  7. Line shells up in pan and bake uncovered for 20 minutes.

  8. Pull out and sprinkle cheese and green onion on top of each shell, bake 5 more minutes.

  9. Allow 5 minutes to cool after removing from oven, then serve up and enjoy!
