The grilled cheese BLT is really the best of both worlds when it comes to sandwiches, and obviously it's hard to go wrong when bacon and melty cheese are your main ingredients. But today we're adding in some spicy guacamole for a southwestern twist to make your taste buds tingle!
This Avacado Grilled Cheese BLT may look gourmet, but trust me it's easy as pie! Perfect for a quick lunch or an easy dinner, and the kids are sure to love it! Melted cheese combining with guac' and bacon...who could say no?? Certainly not I!
We were getting somewhat burnt out on the traditional grilled cheese variations, so I decided to add a little kick to our late Sunday lunch with our favorite guacamole. They came out so well that I knew I had to share them with the world! If you haven't tried it yet, I daresay you're missing out!
Tangy, spicy, melty, bacon heaven between sourdough bread and pan fried to perfection...this sandwich is so good it should be illegal!
Serve with your favorite tortilla chips and salsa, or let it stand alone. With only six simple ingredients the Avocado Grilled Cheese BLT is a top contender for my quickest and easiest lunch recipe yet!

INGREDIENTS
~Makes 2 sandwiches~ Prep Time: 15 min Cook Time:15 min
1 Roma tomato, sliced
1 cup Monterey & Colby Jack cheese (Pepper-jack can be added for extra spice)
Sourdough bread
1 lb Hickory Smoked bacon
4 tbsp spicy guacamole
Butter
Begin by pan frying 1lb bacon on medium heat until done, but still chewy. Cut bacon strips in half before cooking to make them "sandwich size" for easier assembly. Set aside on a plate with a paper towel on it to soak up excess grease, and cover.
Next slice up your Roma tomatoes. As you can see in the picture below, it's best to
score out the seedy middles of the tomatoes when making a fried sandwich. This keeps the gooey middle of the tomato from making your bread soggy.
Once you have the tomatoes sliced, set them aside and get out four slices of sourdough bread (enough for two sandwiches) and lay them on a piece of parchment paper. Generously butter one side of each slice, and lay them butter side down on the paper. The parchment paper will help keep the butter from sticking to the surface too much.
Now you're ready to start assembling your sandwiches! Sprinkle cheese over one slice of bread for each sandwich, the more the merrier! Next spread the spicy guacamole over the cheese. This step can get a bit messy, but you'll want the guac' in the middle to avoid a soggy sandwich. Then top with the sliced Roma tomatoes and finish it off with your pre-cooked bacon. Top with the second slice of buttered sourdough bread. Now you're ready to start frying up your masterpiece!
Heat a large skillet on one click above medium heat. Once it's heated, carefully place the assembled sandwich in the skillet. I find it helps all of the ingredients melt together if you lightly cover the skillet with tin foil, to trap in the heat. Allow to cook on each side for approximately 6 minutes, checking often, until a beautiful golden brown is achieved. Remove from heat and let cool for 1-2 minutes before cutting to ensure the cheese sticks properly. You don't want to lose any of that melty goodness! Now you're ready to EAT!
