This Cheesy Baked Foil Pack Potatoes recipe has quickly become my all-time favorite way to make potatoes. They're always a hit and no one will ever suspect how simple it is. You can even prep ahead of time and store the packs in the fridge until you're ready to pop them in and let the oven do the rest of the work!
I'm very excited to share these with you as they have saved the day more times than I can count when I need a quick side. They're the perfect side for anything from burgers to steaks...I've even made them with brats for the perfect cookout! Buttery, salty, cheesy and seasoned to perfection...I guarantee you'll never want potatoes any other way.

INGREDIENTS
Prep Time: 15 min Cook Time: 35 min Serves: 4 Preheat oven: 375
Aluminum foil
4 Russet potatoes, peeled and cubed
2/3 cup chopped onion
8 tbsp butter
1 cup extra virgin olive oil
1 cup Colby and Monterey Jack cheese
1/2 cup Parmesan (or Mozzarella) cheese
1 tbsp minced garlic
Approx 1/2 tbsp black pepper
1 tsp salt (optional)
Dried Basil leaves (optional)
Begin by peeling and chopping 4 Russet potatoes into cubes.
Next lay out 4 sheets of aluminum foil about 10" long each. Each cubed potato will get it's own foil pack, so put 1/4 of your potatoes onto each sheet. Next sprinkle in 1/4 of you chopped onion, 2 tbsp of butter (put one tbsp on either side to ensure all of the potatoes in the wrap get buttered). Next drizzle 1/4th of your olive oil over the potatoes, and sprinkle on 1/4th of your minced garlic and a few shakes of black pepper (or more if you prefer a lot of pepper).
Now you're ready to wrap up the foil and place the packs on a baking sheet to bake in your preheated oven for 35 minutes. To wrap the foil, bring up the two longest sides together and fold them down loosely. Then curl each end up loosely, so there's plenty of ventilation through the foil pack. They should look like this. Set a timer and let the oven to the work. After 35 minutes, check by opening up one of the packs and poking one of the cubes with a fork. If it breaks in half easily, then you're ready to add the cheese. (If not allow 10 additional minutes to soften the rest of the way.)
Pull the baking sheet out fo the oven and open up each pack. Sprinkle 1/4 cup Colby and Monterey Jack cheese into every pack, then repeat with the Parmesan (or cheese of your choice). Now sprinkle just a pinch of salt into each pack. Close the foil packs back up and place the baking sheet back in the oven for 3-5 minutes for the cheese to completely melt.
Remove from the oven and, my favorite part...serve! You may leave them in the packs or plate your beautiful buttery creation.
